step 1
Remove the feta and sauce sachet from the prepped veg (1 pack) and leave to one side. Preheat the oven to 200°C/180°C fan/gas mark 6.

Add the veg to a large baking dish (approx. 20cm x 35cm) and toss with 1 tbsp of olive oil. Pop into the oven and roast for 10 minutes.

Add the sundried tomato sauce sachet from the veg, the Greek seasoning (2 tbsp), orzo (320 g), tomato sauce (1 jar) and 200ml of water to the baking tray. Stir everything together and season with salt.

Top the orzo with the prawns (1 pack) and the feta from the veg mix, and bake in the oven for 15 minutes, until the orzo is tender and the prawns are cooked through. Check halfway and add another 50ml water if it’s drying out too quickly.

Scatter over the remaining Greek seasoning (1/3 tbsp), the diced feta and oregano (1 pack) and drizzle with ½ tbsp of olive oil. Mix it all together and serve with the lemon wedges (1).
