Preheat the oven to 200°C/180°C fan/gas mark 6.

Heat 50g of the butter (50 g) in a large frying pan and add the onions (3) with a pinch of salt. Stir in the thyme leaves (10 g) and rosemary (5 g). Cook for 7-10 minutes, until soft and sticky. Remove from the heat.

Stir in the cranberries (75 g), macadamias (100 g), and apricots (75 g) along with the lemon zest (1). Season to taste with salt and pepper.

Blitz the baguette (1/2) in a food processor until it’s broken down to a chunky breadcrumb consistency, then stir this into the pan with the onions.

Add the remaining butter (100 g) to a small pan and cook over a medium heat for 4-5 minutes, until brown and nutty. Stir into the bread mixture.

Grease a 23 x 23cm baking dish. Firmly press the stuffing mixture down into the dish. Arrange the sage leaves (10) on top, then drizzle with olive oil.

Bake for 20-25 minutes, until golden brown.
