Heat a saucepan over medium heat. Add the butter (50 g), followed by the onion quarters (1). Cover with a lid and cook for 5 minutes, then pour over the milk (400 ml). Add the bay leaf (1) and cloves (1 tsp) and simmer, uncovered, for 20 minutes.

Fish out the onions, cloves and bay leaf with a sieve – they have imparted all their flavour.

Add the croissant pieces (3) to the milk and remove from the heat. Allow to infuse for 10 minutes, before adding to a blender or food processor and blending until smooth.

Season to taste with salt and pepper.

To reheat, add the bread sauce to a saucepan and top up with a splash of milk to loosen, then gently heat through.
