Preheat the oven to 200°C/180°C fan/gas mark 6. Bake the ciabatta (1) for 6-8 minutes, until golden. Allow to cool slightly, then cut into slices. butter (1 tbsp) each piece, then top with the anchovies (1 tin).

Meanwhile, combine the red onion (1/4), cucumber (1/4) and tomatoes (100 g) in a bowl with a pinch of salt and a drizzle of olive oil.

Decant the gazpacho (1 bottle) into four bowls and top with the chopped veg. Drizzle with olive oil and scatter with the basil leaves (10 g).

Serve the gazpacho with the anchovy toasts.
