Mix the cornflour (1 tbsp) with 2 tbsp of cold beef stock (1 tub) until dissolved.

Heat a large non-stick frying pan over a medium-high heat. Add 1 tbsp of olive oil and tip in the meatballs (1 pack). Cook for 8-10 minutes, turning frequently, until golden brown and cooked through. Stir in the cranberry and port sauce (4 tbsp), followed by the remaining beef stock.

Simmer for 5 minutes, until reduced, then add the cornflour and stock mix and cook until thickened. Stir through the double cream (4 tbsp).

Meanwhile, heat the mashed potato (1 tub) in the microwave for 4 minutes, according to the packaging instructions.

Bring a large saucepan filled with hot water to a boil. Add the peas (200 g) and cook for 1-2 minutes, then drain. Return to the pan and toss with the garlic and herb butter (1 piece), until melted.

Stir the parsley (15 g) through the meatballs just before serving.

Serve the mash in bowls, top with the creamy cranberry meatballs, and peas on the side.
