Preheat the oven to 200°C/180°C fan/gas mark 6. Add the butternut squash (500 g) to a large, greaseproof-lined baking tray and toss with the quesadilla cooking paste (1 pack) and 1 tbsp of olive oil. Bake for 25 minutes, until the squash is soft.

Remove from the oven, then add the hot maple syrup (1 tbsp). Return to the oven for a further 5 minutes until golden brown. Leave to cool slightly, and then lightly crush with a potato masher.

Spread 3 of the wraps (1 pack) with the re-fried beans (1 tin) and top with the squash mix. Top with the grated cheddar and mozzarella (150 g), then sandwich with the remaining 3 wraps on top.

Preheat a large, non-stick frying pan over a medium heat. Working in batches, place the quesadillas into the pan and cook for 4-5 minutes on each side, until golden brown and the cheese has melted (keeping them warm in foil while you cook the rest).

Cut each quesadilla into 6 triangles and serve with the guacamole (100 g).
