Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the sausages (1 pack), tomatoes (850 g), rosemary (10 g), oregano (10 g) (saving a few leaves to garnish) and garlic (4 cloves) (no need to peel) in a large roasting tray. Season with salt and pepper.

Combine the balsamic vinegar (2 tbsp) and tomato paste (1 tbsp) in a small bowl with 4 tbsp olive oil. Stir together then spoon over the sausages and tomatoes to coat. Season everything with salt and pepper.

Bake for 30 minutes, then remove from the oven and stir. Return to the oven for a further 15 minutes.

Place the ciabatta (1) in the oven for the last 8 minutes of cooking time.

Squeeze the garlic from its skins and discard the rosemary (it’s given all its flavour now).

Serve the sausages with a little fresh oregano on top, with the warm ciabatta on the side.
