Using a sharp knife, slit open the sausage skins (1/2 pack) skins. Heat a large frying pan over a medium heat. Add a little splash of olive oil and squeeze in the sausage meat, discarding the skins. Cook for 10 minutes, until golden brown.

Pour in the pizza sauce (1/2 jar) and cook until thickened, then leave to cool.

Preheat the oven to 220°C/200°C fan/gas mark 7. Line a large baking tray with greaseproof paper and pop it into the oven to heat up.

Remove the pizza dough (1 pack) from the fridge and cut it into two equal-sized portions. Shape into two balls and leave to come up to room temperature for about five minutes.

Lightly dust your work surface with a bit of plain flour, then roll out each ball into 15cm discs. Add a spoonful of the spicy sausage mixture to the centre of each circle, followed by the mozzarella (70 g) and basil (1 handful).

Fold the dough over the filling to create a calzone shape, pressing the edges with the side of your palm to seal. Carefully transfer to the hot baking tray and bake in the oven for 12 minutes, until golden brown. Leave to cool for five minutes, then serve with a generous drizzle of hot honey (1 tbsp).
