Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the prosciutto (4 slices) on a foil-lined baking tray and bake for 15 minutes, until crisp. Allow to cool before breaking into shards.

Trim the green beans (200 g), then cook in a pan of salted boiling water for 6-7 minutes, until al dente.

Meanwhile, grate the lemon zest (1) onto a large serving platter and squeeze over the juice. Combine with the balsamic vinegar (1 tbsp) and olive oil (3 tbsp), then season with salt and pepper, stirring everything together to create a dressing. Taste and check you’re happy with the salt and acidity levels.

Drain the beans and toss into the dressing, along with the tomatoes (150 g) and roasted peppers (2).

Scatter over the mint (10 g) and pine nuts (2 tbsp) and crumble over the prosciutto.
