step 1
Add the spinach (80 g) to a heatproof bowl and pour over boiling water. Leave to sit for 1 minute and then drain.
step 2
Preheat the oven to 220°C/200°C fan/gas mark 7. Bring a large saucepan filled with hot salted water to boil. Drop in the pasta (400 g) and cook for 10 minutes and then drain.
step 3
Add the spinach and bechamel sauce (1 jar) to a high-powered blender and blitz until smooth. Season with salt and then pour over the cooked pasta and mix well. Stir in half the cheddar (50 g) and then add to a large (23cm) ovenproof dish.
step 4
Top with the remaining grated grated cheddar (50 g) and bake for 20 minutes, until golden brown.
step 5
Meanwhile, make the mozzarella eyeballs. Halve the mozzarella cherries (125 g) and pop them onto a plate. Pick out your olives (6), half green and half black, thinly slice the green olives and dice the black olives into small pieces. Top the mozzarella cherries with 1 thinly sliced green olive, and stuff with the black olive pieces to make the eyeballs.
step 6
Once the monster mac and cheese is baked, top with the mozzarella eyeballs and dig in.
