Heat a splash of oil in a frying pan over a medium-high heat. Add the corn (326 g) and cook for 7-10 minutes, until lightly charred.

Meanwhile, add the mayo (4 tbsp), yogurt (2 tbsp), lime juice (1/2), smoked paprika (1 tsp) and spring onions (1) to a mixing bowl and season with salt and pepper. Stir in the cooked corn and coriander (15 g), then transfer to a small serving bowl with the feta (50 g) sprinkled on top.

Preheat your air fryer to 200°C for 3 minutes (or preheat your oven to 180°C/160°C fan/gas mark 4). Add the breaded cod bites (1 pack) to the basket and air fry for 8 minutes (or place in the oven for 18 minutes), until crisp. Transfer to a plate and cover with foil to keep warm.

Trim the tortillas (4) to fit inside the air fryer basket if necessary. Use the excess to make air-fried tortilla chips.

Reheat your air fryer to 180°C (or oven to 200°C/180°C fan/gas mark 6) and spray the tacos with oil. Pop into the air fryer and cook for 5 minutes (or in the oven for 10 minutes), until golden and crisp, flipping halfway.

Meanwhile, make the pico de gallo. Add the tomatoes (1), red onion (1/4), chilli (1), coriander (15 g) and lime juice (1) to a mixing bowl. Season with a pinch of salt and pepper and mix. Leave to infuse.

Top the crispy tacos with the guacamole (100 g), cod bites, pico de gallo and some naga chilli sauce (3 tbsp), if you’d like. Serve with the corn salsa, a wedge of lime (1) and an extra sprinkling of coriander, if you like.
