Heat a generous splash of olive oil in a large saucepan over a medium heat. Add the courgettes (2) and lemon zest (1). Season with salt and pepper and cook, stirring occasionally, for 15-20 minutes, until the courgettes are soft and sticky.

Stir in the garlic (4 cloves) and cook for a further 1-2 minutes, until fragrant.

Meanwhile, preheat the oven to 200°C/180°C fan/gas mark 6. Add the ciabatta (2) and bake for 6-8 minutes according to the pack instructions.

Allow the ciabatta to cool slightly then cut down the middle lengthways. Drizzle with the lemon-infused olive oil (1 tbsp).

When you’re ready to serve, assemble the ciabattas with the courgettes, tomatoes (3) and stracciatella (1 pack), then add a large handful of fresh basil (25 g) to each (use like salad leaves!). Sandwich together and dig in.
