step 1
Preheat the 220°C/200°C fan/gas mark 7. Wrap the beetroot (300 g) tightly in tin foil and roast for 1 hour – 1 hour 20 minutes until tender. Leave to cool slightly, peel and then chop into quarters.

Pop the beetroot pieces and most of the feta (200 g) (save a little bit to garnish) into a blender. Add the garlic (1 clove), lemon juice (1/2), 2 tbsp of olive oil and some salt and pepper. Blitz until smooth and transfer to a serving dish.

Drizzle over a little more olive oil and garnish with the mint (10 g) and remaining feta crumbled over the top. Arrange the radish (200 g), Manchego (150 g), olives (100 g), prosciutto (70 g), serrano ham and cheese rollitos (10) and tortillas (1 pack) on a grazing board and serve immediately with the dip.
