step 1
Dice the tomatoes (4) and set them in a sieve over a bowl. Sprinkle with salt and set aside.

Dice the red onion (1/2) and place in a small bowl with the vinegar (2 tsp) and a sprinkle of salt. Set aside.

Blitz the bacon (1 pack) and baguette (1/2) in a food processor to create crumbs. Heat a splash of oil in a non-stick frying pan over a medium heat and add the bacon and breadcrumbs. Cook, tossing regularly, for 5-8 minutes, until golden brown.

Remove the outer leaves from the lettuce (1) and quarter through the core, so the wedges can stay together. Place onto four plates (or one bigger platter) and spoon some of the blue cheese ranch dressing (6 tbsp) over each wedge. Drain the onions and tomatoes of any excess liquid and sprinkle these on top, along with the toasted breadcrumbs and chives (1 handful).
