To make the green rice, blitz the shallots (2), garlic (3 cloves), coriander (25 g) (reserving a small handful to garnish), parsley (25 g) and jalapeño (1) in a food processor with a pinch of salt and a drizzle of olive oil until smooth.

Dissolve the stock pot (1) in 450ml boiling water.

Heat a medium, lidded casserole over a medium heat and add a splash of olive oil. Tip in the rice (200 g) and brown for 2-3 minutes, stirring. Stir in the green sauce and cook for 1 minute.

Add the stock and bring to the boil, then cover and turn the heat down to a low simmer. Cook for 12 minutes, then turn off the heat and allow to stand, covered, for a further 10 minutes.

Meanwhile, heat the refried beans (1 tin), kidney beans in chilli sauce (1 tin) and hot honey sauce (1 tbsp) together in a pan, stirring to help them come together, until warmed through.

Slice the avocado (1) and squeeze the lime juice (1) over the top.

Heat the tortillas (4) in a dry frying pan according to the pack instructions, for 30 seconds on each side.

Assemble the burritos with the rice, beans, avocado, a scattering of coriander and a handful of pickled red onions (1 tbsp).
