Cook the Korean ribs (1 pack) according to packaging instructions.

Bring a large saucepan filled with hot water to a boil. Add the potatoes (300 g) and cook for 5-7 minutes, until tender, then drain. Leave to one side to cool.

Meanwhile, add the thinly sliced cucumber (1) to a large mixing bowl and toss with the rice vinegar (1 tbsp), half the sesame oil (1/2 tsp) and a pinch of salt. Mix through the sesame seeds (1 tbsp) and leave to sit.

Toss the mayo (2 tbsp) and sriracha (1 tsp) with the cooled potatoes, the remaining sesame oil (1/2 tsp) and the spring onions (2), then season to taste with salt and pepper.

Serve the ribs alongside the potato salad and quick pickled cucumbers.
