For the pancakes

M&S frozen supersweet sweetcorn, defrosted
1 box
(400 g)
M&S American-style pancake mix
50 g

Combine the maple syrup (125 ml), lime zest (2) and chilli (1) in a pan and gently warm through.

To make the salsa, dice the tomatoes (300 g) and combine with the lime juice, spring onions (2) and coriander (1 handful). Season with salt and pepper and set aside.

Combine the sweetcorn (150 g) with the pancake mix (1 box) and add 300ml water, beating to combine.

Heat a knob of butter (50 g) in a medium non-stick pan and dollop in enough batter to make a 10-12cm pancake. Heat for around 2-3 minutes or until the pancake begins to bubble, then flip and cook for a further minute, or until the pancake is risen and golden.

Continue with the remaining batter, adding more butter as you go.

Serve the pancakes with a knob of butter on top, drizzle with the hot maple and served with the tomato salsa.
