Preheat the grill to medium. Wrap the ends of the skewers (1 pack) in tin foil (to prevent charring) and place on a wire rack. Cook for 6 minutes, turning halfway, until cooked through.

Meanwhile, add the parsley (25 g), basil (15 g), capers (1 tbsp), lemon juice (1/2) and olive oil (2 tbsp) to a mixing bowl. Season to taste with salt and pepper. Add the drained chickpeas (1 jar) and mix well.

Separate the lettuce leaves (1 head).

When you’re ready to serve, add the chickpeas to the lettuce cups, topped with the ‘nduja prawns (remove from their skewers) and a drizzle of Sicilian lemon mayo (to taste), a grating of lemon zest (1) and a squeeze of lemon juice.
