Heat a large frying pan on medium-high heat and add the bacon (1 pack), cooking for about 10 minutes, until nice and crispy. Drain on paper and set to one side.

Reheat the frying pan, and add the sliced onions (2), garlic (2 cloves) and mushrooms (1 pack) and cook until soft, for around 10 minutes.

In the meantime, bring a large saucepan filled with salted hot water to a boil. Add the spaghettoni (500 g), and cook for 12-14 minutes, until al dente.

Add the soup (1 jar) to the mushrooms followed by the mascarpone (2 tbsp). Simmer together until bubbling, then add in the grated cheddar (80 g) and lardons back in. Stir gently.

Once the pasta is cooked, add it to the sauce and mix well. Season with black pepper and salt to taste.

Serve with grated Parmigiano Reggiano (to taste), if you wish.
