step 1
Empty the pancake mix (1 pack) into a bowl and add 300ml water. Whisk until well combined. Cut the oranges (4) into segments, removing their peel.

Add a small knob of butter (30 g) and a trickle of neutral oil to a non-stick frying pan and spoon in a ladleful of pancake mix, to make pancakes approx. 12cm in diameter.

Cook for 2-3 minutes. When the top of the pancakes begin to bubble, flip then cook for a further minute or until the pancakes are golden and risen. Repeat with the remaining batter.

Serve the pancakes with the blood oranges, a dollop of pistachio crème (2 tbsp) and a drizzle of maple syrup (2 tbsp), or pile into one large stack for everyone to help themselves.
