Preheat the oven to 180°C fan. Halve the squash (1) lengthways and de-seed, reserving the seeds. Slice the squash into 2cm half-moons. Arrange the squash on a parchment-lined baking tray and drizzle with olive oil, salt and pepper and ras el hanout (2 tsp), tossing to coat. Bake for 30-35 minutes, until the squash is tender. Optional: rinse the squash seeds and add to the roasting tray and bake for the full time.

While the squash is cooking, combine the yogurt (250 g), olive oil (1 tbsp) and lemon juice (1). Grate in the garlic cloves (2 cloves) and add ½ tsp salt, tasting and adjusting as needed.

Spread the yogurt sauce onto a platter and arrange the squash slices on top. Spoon over the chimichurri (2 tbsp). Optional: scatter over the roasted squash seeds.
