Put the egg yolks (3), milk (175 ml), vanilla (1 tsp) and spinach (80 g) in a blender or food processor and blitz until smooth. Stir in the flour (225 g), sugar (1 tbsp) and baking powder (2 tsp) and briefly blitz again to incorporate.

Whisk the egg whites until soft peaks form. Fold in the green batter mix.

Add the butter (1 knob) and a splash of oil to a large non-stick frying pan over a medium heat. Add tablespoonfuls of batter to the pan and cook for 2 minutes or until air bubbles form on the top of each pancake. Flip then cook for a further minute. Keep warm while you cook the remaining batter.

Decorate the pancakes to look like monsters using the hallow-scream munch (1 handful) and blueberries (100 g) as eyes, noses and ears, and the kiwis (1) and strawberries (100 g) cut to look like sharp teeth. Serve with maple syrup (to taste) and yogurt (to taste), if you like.
