Mix the sugar (3 tbsp), fish sauce (3 tbsp), garlic (2 cloves), chilli (1), lime (1) juice and vinegar (1 tbsp) in a bowl and set aside.

Cut the watermelon (1) into bite-sized chunks and add to a large bowl along with the onion (1/2), cucumber (1/2), mint (1 handful) and Thai basil (1 handful). Pour over the dressing and mix to combine.

Portion the salad into bowls and top with the peanuts (3 tbsp) and crispy onions (4 tbsp).
