Preheat the oven to 220°C/200°C fan/gas mark 7. Prick the sweet potatoes (2) all over with a fork. Rub a little bit of oil over the sweet potatoes and put them into a roasting tin. Season with salt and pepper and roast for 1 hour until tender.

Meanwhile, to make the slaw, combine the mayonnaise (1 tbsp), chipotle paste (1 tsp), lime juice (1) and season with salt and pepper. Toss through the red pepper (1), cabbage (1/4), carrot (1), sweetcorn (195 g) and coriander (1 bunch).

When the sweet potatoes are nearly done, heat the refried beans (1 tin) in a small saucepan over a medium-low heat for 4-5 minutes (according to pack instructions) until hot. In a small frying pan, cook the lime halves (1) cut side down until charred.

Serve the potatoes with the refried beans, slaw and lime for squeezing on top.
