Heat the olive oil (1 tbsp) in a frying pan over a medium heat and add the garlic (4 cloves). Cook for a minute or two, until caramelised and golden. Meanwhile, cook the pasta (300 g) in a pan of boiling salted water.

Add the cherry tomatoes (250 g) to the frying pan containing the garlic. Add the harissa paste (1 tbsp) and mix well, then continue to cook and reduce while the pasta cooks.

Add the prawns (165 g) to the frying pan and cook for a couple of minutes. When the pasta is still slightly al dente, add it to the frying pan along with 6 tbsp of the pasta cooking water.

Toss everything together until the pasta is perfectly cooked and the sauce is glossy, then add the parmesan (50 g) and toss through the sauce. Spoon into bowls and serve with a handful of rocket (4 handfuls) in each one.
