Mix together the flour (500 g), sugar (1 tbsp), yeast (1 sachet) and salt (1 1/2 tbsp).

Gradually mix in the water (330 ml) and olive oil (25 ml) to form a soft dough.

Knead well on a lightly floured surface for 10 minutes, until the dough becomes smooth and elastic.

Add the dough to a bowl and cover with a clean, damp towel for an hour, until it’s doubled in size.

Tip the dough on to a lightly floured surface and knead for 3 minutes.

Place the dough in a greased 1½/2lb (around 900g / 21x11x7cm) loaf tin, cover loosely with a damp tea towel and leave in a warm place for about half an hour. Meanwhile, preheat the oven to 230°C/210°C fan/gas mark 8.

Uncover the dough and bake for 30-35 minutes. Remove loaf from tin and allow to cool.
