Rinse and soak the rice (200 g) in cold water for at least 5 hours, then drain and wash thoroughly. Line a steamer with greaseproof paper with small holes poked through (you can use a fork), place the rice on top and cover with a lid. Steam over a medium heat for 30 minutes.

Meanwhile, add the coconut milk (400 ml) and sugar (3 tbsp) to a pan. Place over a medium heat and stir constantly until the sugar has dissolved. Remove from the heat.

Add the rice to a bowl and mix in ¾ of the sweetened coconut milk to coat. Allow the mixture to cool for 10 minutes.

Divide the rice between serving bowls and serve topped with a little more of the sweetened coconut milk, the sliced mango (1/2), the passion fruit (1 pouch) and the toasted desiccated coconut (2 tbsp).
