The plump, succulent goose has always been the traditional signifier of the arrival of Christmas, from the old nursery thyme that announces, “Christmas is coming, the geese are getting fat,” to Dickens’s choice of a goose to grace the festive table of Bob Cratchit in A Christmas Carol. At some point, turkey surpassed a classic roast goose as the main course of choice come the big day, but I much prefer the richer, deeper flavour of the lesser-spotted Christmas goose.
