Method

step 1
For the cinnamon swirl filling, melt the butter (50 g) in a small bowl in the microwave for 45 seconds.
step 2
Stir in the brown sugar (1 tbsp) and cinnamon (2 tsp), then transfer to a piping bag or a resealable plastic bag. Chill for 10 minutes to firm up slightly.
step 3
Meanwhile make the pancake batter. Whisk the pancake mix (1 box), water (300 ml) and cinnamon (1 1/2 tsp) in a large bowl until smooth.
step 4
Heat a frying pan over medium heat and add a small knob of butter (30 g). Spoon in enough batter to form a 12-14cm pancake.
step 5
Remove the cinnamon filling from the fridge and snip a small hole in the corner of the bag. When the pancake starts to bubble on top, pipe a spiral of the cinnamon mix from the centre outwards, keeping away from the edge. Flip and cook until golden on both sides. Repeat to make 12 pancakes.
step 6
Warm the salted caramel sauce (3 tbsp) in a small bowl in the microwave for 15 seconds.
step 7
Drizzle the warm sauce over the pancakes and serve with a handful of berries (1 pack).
