Preheat the oven to 240°C/220°C fan/gas mark 9. Remove all the packaging from the duck (1 pack) and pop the sauce sachet to one side. Place the duck on a wire rack over a baking tray, with the fat facing upwards. Discard any of the cooking juices from the pack and pat the duck dry and cook for 35 minutes.

Meanwhile, wash the spring onions (1 bunch), removing any darker outer leaves. Halve the spring onions lengthways, and then in half widthways. Thinly shred the strips of spring onions into thin matchsticks.

Remove the duck from the oven and carefully remove the long backbone by turning it over onto a large plate. Turn the duck back over, then shred the meat with two forks.

Pop the pancakes (1 pack) onto a microwaveable plate and microwave for 35 seconds. Alternatively, remove the pancakes from the packaging, wrap in foil and lay in a colander or steamer. Place over a pan of boiling water, cover and steam for 4-5 minutes.

Spread the sauce sachet from the duck over the pancakes, then top with some of the crispy duck followed by the sliced cucumber (1) and spring onions to serve.
