Preheat the oven to 200°C/180°C fan/gas mark 6. Unroll the pastry sheet (1 pack) and cut into quarters to create 4 rectangles. Place on a parchment-lined baking sheet.

Score a line 2.5cm from the edge to form a rectangular border. Prick all over with a fork. Halve the goat's cheese (100 g) width-wise to create two half-moon shapes. Slice these in half to create four half-moon shapes.

Spread the caramelised red onion chutney (4 tbsp) onto the inner rectangle of each piece of pastry, then top each with a half-moon of goat’s cheese.

Brush the border of the pastry with the beaten egg (1). Pop into the oven and bake for 15 minutes, until golden brown.

While the pastry bakes, make the salad. Add the sliced celery (4), dates (3), hazelnuts (50 g), lemon juice (1/2) and olive oil (1 tbsp) to a mixing bowl. Season with a pinch of salt and pepper.

When you’re ready to serve, toss the watercress (100 g) through the celery salad.

Serve the tarts topped with a sprinkle of thyme (5 g) alongside the celery salad.
