To make the quick-pickled cucumber, place the cucumber ribbons (1) into a heatproof jar or bowl.

Gently heat the vinegar (120 ml), water (120 ml), sugar (1 tbsp), and salt (1 tsp) until dissolved (do not boil). Pour the warm liquid over the cucumber and add the mustard seeds (1 tsp) (additional flavourings such as chilli flakes, coriander seeds or crushed garlic also work well here too, if you like!).

Leave to pickle for 30 minutes at room temperature. This will keep in the fridge for up to a week.

Meanwhile, to make the yogurt and dill sauce, gently whisk the yogurt (400 g) in a bowl until smooth and creamy. Stir in the olive oil (3 tbsp), garlic (1 clove), dill (10 g), lemon zest (1), Dijon mustard (1/2 tsp) and the juice of half the lemon. Season to taste with salt and pepper. Add the maple syrup (1/2 tsp) if you feel the sauce needs more sweetness. Set aside.

To make the mash, place the sweet potatoes (1.2 kg) in a large pan, cover with cold water, and add a pinch of salt.

Bring to the boil and cook for 15–18 minutes, until completely tender. Drain well and allow the potatoes to steam dry for 1–2 minutes.

Mash with the extra virgin olive oil (4 tbsp), thyme (5 g) and nutmeg (1 pinch) along with a pinch of salt and black pepper until smooth.

Add a little warm water or oat milk (2 tbsp) if needed, mashing gently to achieve a soft, silky texture.

Meanwhile, heat a splash of olive oil in a non-stick frying pan over a medium heat. Pan-fry the meatballs (1 pack) for 8-10 minutes, turning regularly, until golden brown and cooked through.

Serve the meatballs with the sweet potato mash, the yogurt sauce and the quick-pickled cucumbers.
