Preheat the oven to 220°C/200°C fan/gas mark 7. Add the chicken breasts (5) to an oven tray and drizzle with olive oil and cook in the oven for 25-30 minutes.

Meanwhile, heat 1 tsp of oil in a large pan over a medium-high heat. Add the red onion (1), peppers (2), cumin (2 tsp) and cinnamon (1 tsp) and cook for 3-5 minutes, until softened. Then stir in the garlic (1 clove) and cook for a further 1 minute. Season to taste with salt and pepper, if you like.

Add the chilli con carne paste (1 pack) and stir until well combined. Stir in the red kidney beans (1 tin), white beans (1 jar) and chopped tomatoes (2 tins).

Dissolve the chicken stock pot (1) in a jug with 400ml boiling water and add to the chilli. Bring to a boil and simmer for 20 minutes.

Once the chicken is cooked, leave to rest for a few minutes then shred the chicken with two forks. Add the chicken into the chilli and simmer for a further 20 minutes, until the sauce thickens.

At the same time, rinse the rice (300 g) in cold water and bring a large saucepan filled with water to a boil. Add the rice to the pan, cover and simmer for 20-25 minutes. Then remove from the heat and drain well.

After the sauce has simmered for 20 minutes, stir in the cottage cheese (2 tbsp) and balsamic vinegar (1 tbsp). Cook for a further 2 minutes.

Just before serving, stir through the chopped coriander (1 bunch). Serve the rice topped with the chilli and with a dollop of guacamole (as needed), if you like.
