Method

step 1
Heat a large frying pan or saucepan over medium-high heat. Add in 1 tsp of olive oil, followed by the beef mince (1 pack). Cook for 8-10 minutes, until beginning to brown.
step 2
Add in the onions (1), carrots (2), celery (2) and peppers (2). Cook for 5-7 minutes and then add the garlic (2 cloves) for 1 minute.
step 3
Stir through the flour (1 tbsp). Mix well to coat and then tip in the red wine flavour pot (1), chopped tomatoes (1 tin), bone broth (2 pieces), drained lentils (1 tin) and 200ml of water. Simmer for 15 minutes, until thickened. Season to taste with salt and pepper.
step 4
Meanwhile, heat a large nonstick pan over medium heat and add 1 tbsp olive oil. Whisk in the flour (2 tbsp) and cook for about 1 minute, until it smells nutty. Gradually pour in the milk (750 ml), whisking constantly to avoid lumps.
step 5
Continue whisking as the mixture comes to a boil and thickens into a smooth béchamel sauce. Remove from the heat and season with salt and pepper to taste.
step 6
Preheat the oven to 200°C/180°C fan/gas mark 6.
step 7
Assemble the lasagne. Spoon a layer of the beef and lentil mixture into the base of a large ovenproof dish. Top with a layer of lasagne sheets (300 g), breaking them to fit if needed.
step 8
Spoon over a layer of béchamel sauce, then scatter over a handful of mozzarella (100 g).
step 9
Repeat the layers of meat, pasta, béchamel, and mozzarella, until all the ingredients are used up, finishing with a final layer of béchamel. Sprinkle over the Parmigiano Reggiano (20 g).
step 10
Bake in the oven for 25 minutes, until the pasta is tender. Let it rest for at least 5 minutes before serving.
