Preheat the oven to 220°C/200°C fan/gas mark 6. Arrange the French fries (400 g) on a baking sheet and scatter with 1 tsp Cajun seasoning (1 tsp). Cook for 15 minutes, shaking halfway.

Meanwhile, heat a splash of olive oil in a non-stick frying pan over a medium heat and add the onion (1) with a pinch of salt. Cook for 5 minutes, until soft.

Add the garlic (3 cloves) and add 1 tsp Cajun seasoning (1 tsp). Cook for 1-2 minutes, until fragrant, then stir in the kidney beans (1 tin) and mixed beans (1 tin). Warm through for a further 2-3 minutes.

Remove the French fries from the oven and spoon over the beans. Scatter over the cheddar (75 g) and return to the oven for a further 10 minutes, or until the cheese has melted and the chips are golden and crisp.

Meanwhile, swirl the remaining 1 tsp Cajun seasoning (1 tsp) through the yogurt (100 g), then grate in the zest of the lime (1). Cut the lime into wedges.

Serve the loaded fries with the spiced lime yogurt, coriander leaves (10 g), pickled red onions (20 g), guacamole (1 tub) and lime wedges.
