Preheat the oven to 220°C/200°C fan/gas mark 7.

Bring a large saucepan filled with lightly salted water to a boil. Drop the pasta (350 g) in and cook for 10 minutes, until just al dente, and then drain.

Meanwhile, heat a large frying pan over medium heat and add the butter (50 g). Once melted, tip in the onions (2) and cook for 10 minutes, until soft and sticky.

Squeeze the sausage meat (1 pack) into the frying pan, discarding the sausage skins. Cook for 5-7 minutes, until golden brown, and then add the smoked garlic (2 cloves) and chilli flakes (1 tsp) and mix.

Add the double cream (150 ml) and simmer for 5-8 minutes, until thickened. Season to taste with salt and pepper.

Add the pasta and mix well then transfer to a 20cm baking dish. Scatter over the grated gouda (150 g) and dollop over the chutney (4 tbsp). Pop into the oven and bake for 20 minutes, until golden brown.
