Preheat the grill to medium.

Heat a medium-sized saucepan over a medium heat and add the butter (30 g). Once melted, tip in the plain flour (25 g) and whisk together until golden and nutty.

Gradually pour in the tomato juice (75 ml) followed by the milk (150 ml), whisking slowly, until thickened. Once thickened, remove from the heat and stir in the Worcestershire sauce (1 tbsp), mustard (1 tsp), celery salt (1 pinch), Tabasco (1 tsp) and grated cheddar (150 g).

Spread the crumpets (1 pack) with the Bloody Mary chutney (6 tbsp) and top with a generous spoonful of the rarebit mixture. Pop under the grill for 5-6 minutes, until nicely blistered and golden brown.
