Turn the grill to high. Line a baking tray with foil and lay the bacon rashers (100 g) on top. Grill for 4-6 minutes, turning once, until golden and crispy. Once cooked, drizzle with the hot maple syrup (2 tbsp).

Lightly butter two slices of the bread (2 slices) with half the butter (1 tbsp). Top the buttered slices with the smoky mature cheddar slices (80 g) and brie (50 g). Top with the maple bacon and season with salt and pepper.

Butter the remaining bread (2 slices) with the rest of the butter (1 tbsp), and sandwich on top of the cheese and bacon mix.

Heat a large, non-stick frying pan over medium heat. Carefully transfer the toasties into the pan and cook for 5 minutes, undisturbed. Carefully flip the toasties using a spatula and then cover with a lid and add 1 tbsp of water to the pan to steam the toasties, so the cheese can melt completely. Remove from the pan and slice in half.

Meanwhile, heat the soup (1 tub) in a saucepan over medium heat for 5-6 minutes, until piping hot. Season to taste with salt and pepper.

Serve the soup in bowls with the toastie for dunking.
