Heat a glug of oil in a large saucepan over medium-high heat. Add the sausages (1 pack) and cook for 4-5 minutes, turning once, until golden brown on both sides.

Add in the drained chickpeas (1 tin) followed by the tagine sauce (1 jar) and simmer for 5-10 minutes, until the sauce has thickened slightly and the sausages are cooked through.

Meanwhile, add the couscous (200 g) to a small saucepan and top up with 300ml of boiling water. Simmer for 3 minutes. Remove from the heat and cover with a lid. Leave to stand for 5-10 minutes and then fluff up with a fork. Season to taste with salt and pepper.

When the tagine is cooked, stir through the parsley (10 g).

Serve in bowls topped with the pickled red onions (2 tbsp), if using, and dig in.
