Tip the plain flour (250 g), caster sugar (30 g), baking powder (1 tsp), bicarbonate of soda (1/4 tsp) and salt into a bowl and stir to combine.

In a large mixing bowl, whisk the egg (1), buttermilk (100 ml), melted butter (25 g) and vanilla extract (1 tsp) together with a fork.

Using a fork, stir the dry ingredients into the wet ingredients, bringing it together into a sticky dough.

On a lightly floured surface, roll the dough to 1cm thickness. Cut out 3 circles, using an 8cm cutter. Cut out the centre of each circle using a smaller 4cm cutter. Brush the doughnuts with a bit of vegetable oil.

Cut out 3 squares of greaseproof paper, each slightly bigger than each doughnut, then set aside.

Heat an air fryer to 180°C. Preheat for at least 3 minutes, then pop the doughnuts into the basket for 5-6 minutes, until lightly golden.

Pop the baked doughnuts onto the greaseproof paper and allow to cool.

Prepare your icing. Add the milk (2 tbsp) to the icing sugar (200 g), 1 tablespoon at a time, mixing until you have a thick, dip-able icing. Spoon 2 tablespoons of white icing into a small piping bag. Set aside.

Add about 2-3 drops of pink food colouring (as needed) to the remaining icing. Transfer the icing to a shallow bowl.

Dip the smoothest side of a doughnut into the pink icing, ensuring a smooth, even coating on one side, allowing any excess to drip into the bowl.

Snip the end of the piping bag and pipe lines of the white icing across the doughnut, about ½ cm apart. Using a cocktail stick, gently trace the icing lines in opposite directions to create a feather effect. Repeat with the remaining doughnuts.

Serve the doughnuts with the raspberry conserve (3 tbsp) and custard (6 tbsp) dipping sauces.
