Toast the pine nuts (50 g) in a dry frying pan over a medium heat for 3-4 minutes, until golden. Set aside in a food processor.

Add the spinach (80 g) to the same pan with 1 tbsp water and cook for 1-2 minutes, until wilted. Squeeze to remove any moisture then add this to the food processor too.

Add the peas (250 g), parmesan (50 g), lemon zest and juice (1), olive oil (75 ml) and basil (1 bunch) to the food processor along with a good pinch of salt and pepper. Blitz to bring together, without allowing it to become too smooth.

Bring a large pan of salted boiling water to the boil and cook the macaroni (400 g) for 8-10 minutes until al dente, the drain and combine with the pesto, tossing to coat.

Serve the pasta with the smoked salmon (200 g), tomatoes and mozzarella (1 pack) and spring onions (1 bunch), letting everyone help themselves to their chosen toppings.
