Place the red cabbage (1/3) in a bowl with a big pinch of salt, the lime zest and juice (2), and the vinegar (1 tbsp). Scrunch with your hands to combine. Set aside.

Slice the halloumi (1 pack) into fingers. Add the hot honey sauce (2 tbsp) to a shallow bowl with 1 tbsp olive oil. Coat the halloumi in the marinade.

Heat a non-stick frying pan over a medium heat. Pan-fry the halloumi for 2-3 minutes on each side, until golden brown. Alternatively, place in the air fryer at 180°C for 10 minutes until golden and crisp.

Meanwhile, heat the tortillas (8) in a dry frying pan over a high heat for 30 seconds on each side. Keep warm in a clean tea towel.

Load the wraps with the hot honey halloumi, lightly pickled red cabbage, guacamole (1 pack) and a scattering of fresh coriander (10 g).
