Heat the garlic oil (2 tbsp) in a medium-sized frying pan over a high heat.

Once the oil is hot, add the tomatoes (1 pack) and onions (1) and cook for 10 minutes.

Meanwhile, carefully blitz the burrata (150 g) in a blender for 10 seconds with 1 tbsp of olive oil, salt and pepper. Spoon into a bowl or plate.

After the tomatoes and onions have been cooking for 10 minutes and the tomatoes are beginning to blister, add the garlic (2 cloves) and season with salt and pepper. Turn down the heat and cook for a further minute.

Add the balsamic vinegar (1/2 tbsp) to the pan and cook for another minute. Turn off the heat.

Top the burrata with the tomato mix. Finish with a drizzle of pesto (to taste) and season. Use the focaccia (1 pack) to load up with dip.
