Preheat oven to 180°C/160°C fan/gas mark 4.

Cut the butter (60 g) in half. Cut one half into 4 thin slices and add the other half to a large non-stick frying pan along with 1 teaspoon of olive oil. Heat the frying pan over a medium-high heat until the butter has melted. Add the onion (1) and cook for 1-2 minutes. Add the red peppers (1) to the pan and cook for 2-3 minutes. Stir in the smoked paprika (1/2 tsp) and cook for 1 more minute.

Spoon the jar of giant butter beans (1 jar) into the pan, along with all the liquid from the jar. Bring this mixture up to a gentle simmer, stir in the tomatoes (10), and remove the pan from the heat.

Divide this mixture into 2 oven-proof dishes. Place one cod loin (2) on top and season with salt and pepper. Add 2 slices of cowboy butter to each piece of cod and place the dishes onto a tray and bake for 15 minutes, or until the fish is cooked.

Remove from the oven and drizzle with the 1 tsp of olive oil.

Sprinkle each one with flat leaf parsley (1 tbsp) and serve.
