step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a large baking tray with greaseproof paper. Squeeze the sausage meat (1 pack) from their skins and pop into a mixing bowl with the Manchego (60 g) and mix.

Unroll the puff pastry (1 pack) and cut the sheet of pastry in half lengthways so you have two long strips.

Divide the sausage mixture into two and form into a log shape. Pop each log down the centre of each piece of pastry. Fold the pastry on top of the sausage mixture and seal the sides together with your fingers. Crimp the edges together with a fork.

Cut the two long sausage rolls into 6 smaller pieces, so you have 12 in total. Place them onto your baking sheet and brush the tops with egg (1). Scatter over some nigella seeds (4 tsp) and place into the oven for 25-30 minutes or until golden and crispy. Remove from the oven and let them cool slightly before serving.
