Add the self-raising flour (350 g) and yogurt (350 g) to a mixing bowl. Mix with a spoon until it comes together, then tip the mixture onto a clean work surface with a dusting of flour. Knead the dough until springy. Pop under a clean tea towel for 30 minutes to rest.

Meanwhile, mix the butter (4 tbsp), parsley (10 g), basil (10 g) and smoked sea salt (1 tsp) until well combined.

When you are ready to cook, roll the dough into a log shape and cut into 8 equal pieces. Flatten and roll out into discs, about 1cm thick. Add a bit of flour to your work surface so they don’t stick.

Place onto the barbecue (or a griddle pan) for 3-5 minutes on each side, until charred and cooked through. Brush with the herb butter and serve.
