Heat the olive oil (3 tbsp) over a medium heat in a large casserole and add the onion (2) and a pinch of salt. Cook for 6-7 minutes until soft then stir in the garlic (3 cloves) and cook for a further minute.

Stir in the tomatoes (1.5 kg), tomato, garlic and herb paste (1 tbsp), the passata (200 g) and a handful of basil (1 bunch) (reserve half to garnish).

Turn the heat down to low and cook for 1.5 hours, stirring occasionally, until reduced and jammy. Season to taste with salt and pepper. Set 1/5 of the sauce aside (to use in another recipe).

When the sauce is almost done, cook the pasta (400 g) in a pan of salted boiling water for 8-10 minutes or until al dente. Toss the pasta through the sauce and serve with some more basil on top.
