Melt the butter (2 tbsp) in a large, lidded saucepan over a medium-high heat. Add in the sliced onion (1) and cook for 5-7 minutes, until softened.

Lower the heat and tip in the carrots (2), Middle Eastern spice paste (1 pack) and half the spicy potato seasoning. Cook for 2-3 minutes, until the carrots are soft.

Meanwhile, boil a kettle. Add a pinch of saffron (1 pinch) to a measuring jug and top up with 100ml of boiling water. Leave to infuse, then pour into the pan and simmer for 2 minutes.

Add the rice (250 g) and toast for a minute, then top up with 300ml of boiling water. Stir in the cardamom pods (3) and cranberries (50 g). Lower the heat to a gentle simmer, and cover with a lid for 10-15 minutes, until the rice is cooked. Turn off the heat and leave to stand with the lid on whilst you cook the koftas.

Cook the beef koftas (1 pack) according to packaging instructions.

Stir the parsley (15 g) through the cooked rice, and top with the chopped pistachios (50 g). Serve alongside the koftas and plenty of labneh (to taste).
