Heat a large frying pan with 1 tbsp olive oil over a medium-high heat. Add the mustard seeds (1 tsp) and cook until they begin to pop then add the onion (1) and cook for 5 minutes, until softened.

Add the ginger (1 tsp) and garlic pastes (1 tsp) followed by the tikka masala seasoning (2 tbsp). Tip in the chopped tomatoes (1 tin) and stir well. Simmer for 7 minutes, until the sauce has thickened.

Meanwhile, heat another frying pan over medium-high heat with 1 tbsp of olive oil. Add the halloumi (250 g) and cook for 4-5 minutes, turning occasionally, until golden brown all over.

Tip the halloumi into the tomato sauce and add the double cream (100 ml). Lower the heat and simmer for 5 minutes, until thickened. Add the spinach (120 g) and stir to combine, cooking until the spinach has just wilted.

Heat the pilau rice (1 pouch) according to packaging instructions and serve alongside the curry, topped with an extra drizzle of cream and a small handful of coriander (1 handful), if you like.
