step 1
Combine the jerk paste (3 tbsp), honey (1 tsp) and 1 tbsp vegetable oil in a shallow bowl. Add the prawns (200 g), stir and leave to marinate while you get on with the rice (200 g).
step 2
Add the rice, coconut cream (1 tin), thyme (1 bunch) and half the spring onions (1/2 bunch) to a lidded saucepan with a good pinch of salt and 325ml cold water. Stir to combine. Cover and bring to the boil, then turn the heat down to low and simmer for 8-10 minutes, until the liquid is absorbed.
step 3
Remove the lid, then quickly stir in the beans (1 tin) before replacing the lid and allowing to stand while you cook the prawns.
step 4
Heat a splash of oil in a frying pan over a medium-high heat. Add the prawns and cook for 4-5 minutes, until the prawns are cooked through.
step 5
Serve with the lime wedges (2) and the remaining spring onions (1/2 bunch) on top.
